Moroccan Lamb Tagine
Indulge your tastebuds to a Moroccan souk with this meltingly tender lamb tagine packed with dates!

INGREDIENTS
1 tbsp | Olive Oil |
1pc | Onion (finely sliced) |
1kg | Lamb (cubed) |
300g | Carrots (chopped) |
8pcs | Dates |
100g | Dried Apricots |
1 tbsp | Clear Honey |
2 tbsp | Parsley |
1 tbsp | Tomato Puree |
1/2 tbsp | Cayenne Pepper |
1 tsp | Ginger |
1 tsp | Turmeric (freshly grated) |
2pcs | Cinnamon Sticks |
2 tbsp | Paprika |
DIRECTIONS
1 | Heat oil and cook onion. Add lamb, carrots and spices and cover with water. Bring to just under boil. You may wish to add a Knorr Lamb Cube. |
2 | Add tomato puree, over and simmer for 1 hour 20 minutes. |
3 | Add apricots and honey and any seasoning. Simmer uncovered for 20 minutes until thick and soupy. |
4 | Add dates and simmer for a further 5 minutes. Scatter with parsley leaves and serve with couscous or quinoa |
