Baked Asparagus with Crumbs
A deliciously quick side dish topped with breadcrumbs!

INGREDIENTS
500g | Trimmed asparagus |
2 tsp | Olive oil |
½ tsp | Salt |
½ tsp | Black pepper |
¼ cup | Breadcrumbs |
¼ cup | Panko |
½ tsp | Garlic powder |
¼ cup | Grated parmesan cheese |
2 large | Beaten eggs |
DIRECTIONS
1 | Preheat oven to 250°C. Line a baking sheet with aluminium foil and non-stick spray. |
2 | In a large bowl, combine panko and parmesan cheese. |
3 | Season with salt and pepper, and set it aside. |
4 | Working in batches, coat asparagus in flour, then dip into eggs and finally into the panko mixture. |
5 | Place asparagus onto baking sheet and bake for 10-12 minutes or until golden brown. |
6 | Serve immediately. |
For a non-vegetarian version, top the roasted asparagus with an over-easy or poached egg and sprinkle with prosciutto bits.
