Greek Turkey Burger

INGREDIENTS
200g | Plain Greek Yogurt |
1 pc | Medium Lemon |
1/4 tbsp | Minced Garlic |
1/4 tbsp | Dried Dill |
500g | Ground Turkey |
6 pcs | Sun-dried Tomatoes (Halved) |
1pc | Medium Red Onion |
50g | Frozen Spinach |
1/4 cup | Crumbled Feta Cheese |
1 tbsp | Dried Oregano |
1/3 cup | Breadcrumbs |
1 pc | Egg |
1 pc | Cucumber |
6pcs | Hamburger Buns |
Salt, as needed | |
Pepper, as needed |
DIRECTIONS
1 | For the yogurt sauce, combine yogurt, 1/4 tsp minced garlic, dry dill, lemon juice (half of the lemon) and a dash of salt. Mix well and refrigerate. |
2 | Defrost the spinach and squeeze out the moisture. Roughly chop the spinach as well as the sun dried tomatoes and 1/4 of the red onion. |
3 | Combine the ground turkey with spinach, sun dried tomatoes, red onion, feta, 1/2 tsp minced garlic, dried oregano, egg, bread crumbs, 1/2 tsp of salt and some freshly ground pepper. Be sure to mix well. |
4 | Form six patties using the mixture. |
5 | Cook the burgers on a grill, skillet or over an open flame. |
6 | Coat the inner sides of the buns with yogurt sauce, place a cooked patty and top with thin slices of red onion and cucumber. |
Replace the patty with chicken if preferred.
