Lemon Chicken Rice

INGREDIENTS
1 Can (300g) | Campbell’s® Condensed Cream of Chicken Soup |
400g | Chicken, cut into small pieces |
5 tbsp | Lemon juice |
1 tsp | Grated lemon rind |
6 cloves | Garlic, finely grated |
1 ½ cups | Rice, washed and drained |
1 cup | Water |
Salt and pepper | |
Coriander leaves (Optional for Garnishing) |
DIRECTIONS
1 | Pour Campbell’s® Condensed Cream of Chicken Soup into a large bowl, add in chicken, lemon juice, lemon rind, garlic, salt and pepper. Mix well, cover by cling wrap and marinate for an hour in fridge. |
2 | Place rice into a rice cooker, add in 1 cup of water and marinated chicken. Cook as per rice cooker instructions. |
3 | Garnish with coriander leaves. Serve warm. |
Chef tip: Brown rice or Basmati rice can be used for healthier option and adjust the water accordingly.
