Pineapple Square Tarts

INGREDIENTS
226g | Butter (unsalted) |
½ tbsp | Shortening |
1 | Egg |
2 tbsp | Icing sugar |
1 tsp | Pineapple essence |
2 tbsp | Cornflour |
2 ½ tbsp | Milk powder |
3 cups | All purpose flour |
1 | Pineapple, peeled, cored and diced |
¾ cup | Granulated sugar |
½ cup | Maltose sugar (optional) |
DIRECTIONS
1 | Place pineapple in food processor and blitz until it is pureed. |
2 | Stop and scrape the sides of the bowl occasionally. |
3 | Cook it until the liquid has evaporated. |
4 | Reduce the heat. Add sugar, cook until it thickens. |
5 | Add in the maltose sugar. Cook for 12 minutes. |
6 | Transfer mixture to a shallow bowl and refrigerate until cool. |
7 | Cream butter, icing sugar and shortening for approximately 10 minutes. |
8 | Add in the egg and essence, as the whisk is running. |
9 | Remove from whisk and fold in the flour, corn flour and milk powder. Place the dough in the refrigerator for 15 minutes. |
10 | Divide dough into approximately 20-30 pieces and flatten each. |
11 | Place a teaspoon of the pineapple filling in the center of the dough. |
12 | Press into square mold and bake it at 180℃ for 20 minutes. |
13 | Turn it around to bake for another 10 minutes, or until it browns. |
Fun fact: Pineapple sounds like “prosperity arrives” in several Chinese dialects hence pineapple tarts are considered ‘good luck food’ in Chinese culture.
