Pineapple Square Tarts

INGREDIENTS

226gButter (unsalted)
½ tbspShortening
1Egg
2 tbspIcing sugar
1 tspPineapple essence
2 tbspCornflour
2 ½ tbspMilk powder
3 cupsAll purpose flour
1Pineapple, peeled, cored and diced
¾ cupGranulated sugar
½ cupMaltose sugar (optional)

DIRECTIONS

1Place pineapple in food processor and blitz until it is pureed.
2Stop and scrape the sides of the bowl occasionally.
3Cook it until the liquid has evaporated.
4Reduce the heat. Add sugar, cook until it thickens.
5Add in the maltose sugar. Cook for 12 minutes.
6Transfer mixture to a shallow bowl and refrigerate until cool.
7Cream butter, icing sugar and shortening for approximately 10 minutes.
8Add in the egg and essence, as the whisk is running.
9Remove from whisk and fold in the flour, corn flour and milk powder. Place the dough in the refrigerator for 15 minutes.
10Divide dough into approximately 20-30 pieces and flatten each.
11Place a teaspoon of the pineapple filling in the center of the dough.
12Press into square mold and bake it at 180℃ for 20 minutes.
13Turn it around to bake for another 10 minutes, or until it browns.
Fun fact: Pineapple sounds like “prosperity arrives” in several Chinese dialects hence pineapple tarts are considered ‘good luck food’ in Chinese culture.
