Strawberries Chocolate Cheesecake

INGREDIENTS
1 pint | Fresh strawberries |
3/4 cup | Semi-sweet chocolate chips |
220g | Cream cheese (softened) |
1/4 cup | Sugar |
2 tbsp | Butter (softened) |
1 tsp | Vanilla essence |
1 1/2 tbsp | Unsweetened cocoa powder |
1 cup | Whipped cream/topping |
3 tbsp | Chocolate chips |
3 tbsp | Chocolate cookie crumbs |
DIRECTIONS
1 | Wash strawberries well and let them dry. (Chocolate Cheesecake Stuffed Strawberries) |
2 | Cut the tops off the strawberries and use a small spoon to hollow them out. (Chocolate Cheesecake Stuffed Strawberries) |
3 | Melt the chocolate chips on medium heat for about 20 seconds, then turn up the heat every 15 seconds until the chocolate is melted. (Chocolate Cheesecake Stuffed Strawberries) |
4 | Flatten the bottom of each strawberry by slicing off a thin piece. When the strawberries can stand upright, pat them dry with a paper towel. 5 | Melt the semi-sweet chocolate chips on medium heat for about 35 seconds, then turn up the heat every 20 seconds until the chocolate is melted. (Chocolate Cheesecake Filling) |
6 | Run the mixer on medium to combine cream cheese, butter, vanilla, cocoa powder and sugar. Once fluffy, add in cooled chocolate and mix on low until smoothly combined. Add in whipped topping and mix well. (Chocolate Cheesecake Filling) |
